After having Emily, Trish continued working
and had even less time to dream much less cook.
Outside of an industrial kitchen, Trish’s culinary
talents are infamous. “I’m a terrible cook at home.
Once I burned down my kitchen cooking a grilled
cheese.”
Hating to be away from Emily during the
workday, Trish used to pick her up on lunch break.
“Every day, Emily had to have a grilled cheese,”
Trish remembers. She made Emily the sandwich,
and in a hurry, Trish left her paperwork and $1,300
in cash from US Foods by the stove. After dropping
Emily off at day care, Trish went by the bank and
realized she had left her money at home. Pulling
up to her driveway, Trish smelled smoke. “I said,
‘Something’s on fire,’ and I checked both my
neighbor’s houses first. I went inside and said, ‘Oh
my God! It’s my house!” Even burning her kitchen
down and losing hundreds of dollars in a fire wasn’t
enough to scare Trish away from her restaurant
dream.
After years of friendship with Trish in the
professional world, Shirley left Shoney’s in 2010 to
work with her husband Hugh McCord at McCord’s
Gun and Bow. Shirley’s newest idea was to start
a buffet at McCord’s, and she wanted Trish to sell
them their groceries, which she did. However, it
wasn’t long before Trish turned in her resignation
at US Foods. “Shirley knew I wasn’t happy with my
job,” Trish said. When a family friend fell ill, Shirley
decided she’d be their caretaker, and while she was
away, Trish could fill in for her at McCords. “I got
thrown right into the kitchen,” Trish says. Finally
together, Trish and Shirley were tantalized by the
dream of opening up their own restaurant. Two
years later, they started “Cash and Carry,” reselling
groceries from US Foods, and they also catered
together out of McCord’s. As a part-time employee,
Trish also began working at 21st Century, an after
school care at J.R. Trippe Middle School, where
she was able to pour into kids’ lives and further her
calling of helping others.
In 2016, Shirley’s husband Hugh had worked 33
full years at McCord’s and was ready to retire. Trish
said, “Flo, you gotta get outta there too!” Once they
sold McCord’s, Shirley threw up her hands and said,
“Thank you, Jesus!” She saw an open future for
their dream to finally take flight.
“I always had the dream of a restaurant in the
back of my mind,” Trish said, “but I was scared, I
guess. Scared to step out there. What if I failed?”
They began the hunt for a new building and looked
everywhere from the old Poppy’s restaurant to
Popeye’s. As their dream gained momentum, “Flo”
and “Ethel’s” relatives had their concerns. Bucky
Kennedy, Trish’s brother, said, “Tricia, I love you
and Shirley, but y’all are mercy people. If you’re
not careful, y’all are going to give away all your
food, and you won’t make any profit.” Trish and
Shirley also met with Shirley’s husband Hugh to ask
